Cashew Chicken Melts

  • 1-1/2 cups cubed cooked chicken
  • 1/3 cup coarsely chopped cashews
  • 1/3 cup mayonnaise or salad dressing
  • 1/4 cup sliced celery
  • 2 T. sliced green onions
  • 3 English muffins, split, toasted
  • 6 (3/4-oz.) slices Cheddar or American cheese
1. Heat oven to 350 degrees F. In medium bowl, combine all ingredients except muffins and cheese; mix well.

2. Cut 36x12-inch piece of heavy-duty foil; place on cookie sheet. Place muffin halves on foil; spoon chicken mixture onto muffin halves. Place one slice cheese over each. Wrap securely in foil, using double-fold seals (allow space between cheese and top of packet to prevent cheese from sticking).

3. Bake at 350 degrees F. for 20 minutes or until sandwiches are hot.

Makes 6 open-faced sandwiches.
