Cornbread No. 1 & No. 2

Cornbread No. 1
  • 1 cup flour
  • 3-1/2 tsp. baking powder
  • 3 T. sugar
  • 1/4 cup oil
  • 1 cup yellow corn meal
  • 1 tsp. salt
  • 1 cup regular milk
  • 1 egg
1. Mix all dry ingredients.

2. Add liquid and egg.

3. Bake in 8" greased pan at 375° for 30 minutes.



Cornbread No. 2
  • 1 cup flour
  • 1 or 2 T. sugar
  • 1/2 tsp. salt
  • 1 T. baking powder
  • 1 cup corn meal
  • 2 eggs
  • 1 cup regular milk
  • 3 T. melted shortening
1. Sift flour, sugar, salt, and baking powder together.

2. Stir cornmeal thoroughly into flour mixture.

3. Combine well beaten eggs, milk, and shortening. Add to dry ingredients.

4. Mix well; pour into greased 8" pan and bake in moderate oven (375°) for 40 minutes.
