Italian Sausage & Vegetable Stew

  • 1-2 T. olive oil
  • 1 lb. mild Italian sausage
  • 16 oz. frozen mixed vegetables (including diced onions; green, yellow, and red peppers)
  • 2 medium zucchini, sliced
  • 1 cup (approximately) sliced fresh mushrooms
  • 4 cloves garlic, minced
  • 1 can (14-1/2 oz.) chicken broth
  • 1 can (14-1/2 oz.) diced Italian-style tomatoes, undrained
  • Cooked rice, prepared separately
1. Heat oil in 6 qt. saucepot over medium-high heat. Cook sausage in oil about 8-10 minutes. Remove from pan; cut into slices. Return sausage to pan.

2. Add all remaining ingredients. Bring to a boil. Reduce heat to low; simmer another 10-15 minutes.

3. Serve over rice, if desired.

Makes about 6 servings (1 cup).
