- 1 cup dry lentils
- 5 cups water
- 1/2 cup chopped onion
- 2 tsp. instant beef bouillon granules
- 1 tsp. dried basil, crushed
- 1/4 tsp. pepper
- 12 oz. fully cooked smoked or Polish sausage, quartered lengthwise and sliced 1/2-inch thick
- 1 10-oz. package frozen cut broccoli
- 1 medium carrot, halved lengthwise and thinly sliced (1/2 cup)
1. Rinse lentils and drain.
2. In a large saucepan combine lentils, water, onion, bouillon granules, basil, and pepper. Bring to a boil, reduce heat, cover and simmer for 25 minutes.
3. Add sausage, frozen broccoli, and carrot. Return to boiling. Simmer, covered, for 10 to 15 minutes longer or until lentils and vegetables are tender.
Makes 4 main-dish servings.
