Many Bean Soup No. 4 (slow cooker)
  • 1 (20 oz.) package many bean soup mix, sorted and rinsed
  • 1/2 lb. smoked beef sausage ring, cut into 1/4-inch slices
  • 1 large onion, chopped (we use frozen onions - 1 cup)
  • 10 cups water
  • 1-1/2 tsp. dried thyme leaves
  • 1 tsp. salt
  • 1/2 tsp. pepper
  • 2 medium carrots, shredded (1-1/3 cups)
  • 1 can (14-1/2 oz.) diced tomatoes, undrained
1. Mix all ingredients except carrots and tomatoes in 5-6 quart slow cooker.

2. Cover and cook on high setting for 8-10 hours or until beans are tender.

3. Stir in carrots and tomatoes. Cover and cook on high about 15 minutes or until hot.
