Notes: This recipe comes from a Trader Joe's bag of 17 Bean and Barley Mix. I made it and loved it, although I may have modified it here and there. I used Trader Joe's canned marinara sauce.
  • 1-1/2 cups Many Bean mix washed and picked over
  • 2 T. olive oil
  • 1 cup chopped onion
  • 1 cup chopped celery
  • 1 cup chopped carrot
  • 3-4 cloves garlic, finely chopped (or less, to your taste)
  • 1 cup frozen mixed sweet peppers (or chopped bell peppers)
  • 1 bay leaf
  • 1 tsp. Italian seasoning
  • 1 tsp. dried basil
  • 1 28-oz. can marinara sauce (or tomatoes, coarsely pureed or diced)
Soak beans overnight (optional) and drain. Cook onion, celery, carrot, peppers, basil, and garlic in olive oil until soft.

Combine all ingredients in a large pot and cover with water. Simmer, covered, about 1-1/2 to 2 hours to desired tenderness. Soaking may decrease cooking time.

Makes about 8 hearty servings.
